After processing, a quarter of the soluble proteins in some soybeans turned out to be pork, according to the company. According to the source, these efforts aim to help wean ourselves from environmentally harmful habits because animal farms are among the biggest methane polluters.

Experiment details

Rather than completely and abruptly replacing meat, Moolec CEO Gaston Paladini said the company hopes to offer producers a way to reduce their costs by adding alternatives such as pork soy. These modified beans have a pinker hue and meatier taste compared to regular ones.

Moolec’s research is just one of many attempts to turn plant-based ingredients into meat alternatives. Initiatives like this are trying to persuade the public about plant-based alternatives, as consumers have been shown to be averse to products that taste and texture like real meat but are not. But as always, only time will tell whether the new product will make it to our plates.

I personally believe the plant-based industry (i.e. meat alternatives, Ed.) is slowing down because the cost, taste, and flavor are good but not good enough. Plant companies still need to improve taste and texture and reduce cost.

Moolec was spun off from another company, Bioceres Crop Solutions, which was also working on using pea plants to produce beef protein and safflower milk coagulants.

Wired points out that soybeans grown by Mootec do not currently comply with EU and UK GMO regulations. But Paladini remains optimistic. He hopes that sooner or later humanity will “accept science.”
