For coffee lovers, how about laser brewed coffee? Like this. Researchers at the University of Duisberg-Essen (UDE) in Germany have developed a method cold coffeeusing a laser beam. The most interesting thing is that it only takes three minutes for making coffee.

Instead of taking up to 24 hours with conventional cold infusion methods, laser coffee – a way to quickly make cold coffee. Anna Rosa Tsifus, chemical engineer in charge of the research, ensures that new cold fermentation process extracts the same strong flavor from the grainin addition to the same chemical elements present in coffee extracted at low temperatures. “Many iced coffee drinkers give up this habit because of the long brewing time. More modern equipment can reduce this period to about 12 hours, which, to put it bluntly, requires some planning.” explained Zyphus.

Cold coffee in 3 minutes

Extracting cold coffee with up to three times the amount of caffeine than the traditional hot water filtration process, another factor is that the drink has lower levels of acidity and bitterness, while retaining the natural taste of the beans. But a big complicating factor is the lengthy brewing process for making coffee. The researchers ensure that the laser coffee treatment process, which takes just three minutes, guarantees the same performance as the traditional method.

The extraction process uses a technique called laser fusion and colloid processing, a technique that separates metallic solids in solvent solutions. For this it was used Nd:YAG which is a solid state laser emission device with yttrium oxide and crystalline aluminum at the end.. “We ran this laser through a solution of ground coffee mixed with water about 80,000 times per second for three minutes, raising the temperature by just a few degrees. The resulting drink was very close to traditional iced coffee, which is brewed all day.”Zifus explained.

The acidity of the laser coffee was almost the same as that of a traditional cold coffee, and much lower than that of a hot drink. The aroma was somewhere between cold pressed and hot water brewed coffee. Now the caffeine level is closer to hot coffee, and the main characteristic of cold coffee is the high caffeine content. The researchers say they intend to test the laser with other drinks and aim to improve the process. “Laser iced coffee is just the beginning. We are working to develop other tea and matcha recipes that can use the same fermentation process to preserve the aroma, flavor and chemical properties of the drinks.”
